I used to buy into the moleskine hype but their products suck actually and I also hate white paper. My favorite sketchbook brand is Stillman & Birn (the Nova series specifically). I use the tan/toned paper ones and they can open flat and can handle multi media materials. You can even oil paint in them if you prep correctly. Here’s some pages from two separate sketchbooks/art journals of mine.
