I have four muffin tips for making bakery style muffins at home.

Tip number one:

Rest your batter for 15 minutes in your mixing bowl after you make it. This is gonna allow the starch molecules to swell and absorb, creating the thicker batter and the thicker batter is known for doming!

Tip number two:

Fill your muffin holes with at least six to eight tablespoons of batter. That’s like a heaping half cup okay. You want them super full so they’re gonna create that dome.

Tip number three:

Kinda goes along with tip number two. You’re only gonna fill every other hole in your muffin pan. And why we do that - that’s so the muffins that are baking can spread and dome without running into their neighbors. Because when they run into their neighbors they get like square edges but we want perfect dome circles.

Tip number four:

You’re to bake your muffins at a high temperature initially. That’s gonna be 425*F for the first seven minutes. And then keep them in the oven and lower the temperature to 350*F for the remaining bake time. Starting the muffins off at a high temperature initially allows the muffins to rise rapidly and it sets the outer surface of the muffin, producing a dome shape.

There you have it. My four muffin tips for creating bakery style muffins.

Cortes’ men thought the Mexica’s floating city must be a dream: stone temples jutting from the water, voracious bright gardens and grand estates.

My sun-worshipping ancestors kept their gods close, heeded their rapt whispers. In their names, they built marvelous canals and walked on the waters.

It shouldn’t then surprise that artists have tried to recapture Tenochtitlan, brooding on the dream journals of Spaniards: they imagine her bright causeways, the lush gardens paving her streets like enchantments.

The Spanish, steely god-mongers that they were, knew well how to deal with enchantment: They burned Tenochtitlan to ash.

Leí que los Mexica ahogaban a mujeres de cercanos pueblos para apaciguar a la diosa de las lluvias. Su templo mayor tenía dos estantes de cráneos.

Mis antepasados que adoraban al sol mantenían a sus dioses cerca, escuchando a sus voces rapaces. En sus nombres, perpetraban maravillas y atrocidades.

Love how tumblr has its own folk stories. Yeah the God of Arepo we’ve all heard the story and we all still cry about it. Yeah that one about the woman locked up for centuries finally getting free. That one about the witch who would marry anyone who could get her house key from her cat and it’s revealed she IS the cat after the narrator befriends the cat.

Exercises for all the homies who want to have a long career drawing.

The true problem with being an artist and drawing all day (as I wanted my whole life) is that human backs are not designed to hold that position, so it is very common for artists and designers to have really stiff shoulder blades, creating a chain of muscle strain towards the arm AND the back… and a lot of pain.

These are some physical exercises for artists and honestly anyone who works at a desk.

A new way to navigate Tumblr

If you use Tumblr on a web browser, you might have noticed us testing a brand new navigation on your dashboard in the last month. Now, after some extensive tweaks, we’ve begun rolling out this new dashboard navigation to everyone using a web browser. Welcome to the new world. It’s very like the old world, just in a different layout.

Why are we doing this? We want it to be as easy as possible for everyone to understand and explore what’s happening on Tumblr—newbies and seasoned travelers alike.

A New Way To Navigate Tumblr

Labels over icons: When adding something new to Tumblr in the past, we’d simply add a new icon to our navigation with little further explanation. Turns out no one likes to press a button when they don’t know what it does. So now, where there’s space, the navigation includes text labels. Since adding these, we’ve noticed more of you venturing to previously unexplored corners of Tumblr. Intrepid!

What’s already been fixed? Thanks to feedback from folks during the testing phase, we’ve been able to make some improvements right out of the gate. Those include returning settings subpages (Account, Dashboard, etc.) to the right of the settings page instead of having them in an expandable item in the navigation on the left; fixing some issues with messaging windows on smaller screens; and streamlining the Account section to make it easier to get to your blogs.

What’s next? We’re looking into making a collapsible version of this navigation and improving the use of screen space for those of you with enormous screens. We’re also working on improving access to your account and sideblogs.
