Okay so for good basic food safety you probably want to start with something simple, and the FDA has you covered!

If you're interested in getting a better handle on this stuff, you might want to consider taking a food handler certification course online. In many US states you have to pass a food handler certification course in order to work in restaurants, so there are good, comprehensive online courses and assessments available at a fairly low cost ($15).
